About the Author

Gianaclis Caldwell and her family operate Pholia Farm, an off-grid, raw milk cheese dairy in Oregon. She is the author of the award-winning Mastering Artisan Cheesemaking, as well as other books on cheesemaking and running a dairy. Applying a holistic, organic management approach to the health of her goats comes naturally for Gianaclis: She was raised on an organic farm; her parents were chiropractors; and she pursued a career in nursing. Her aged, raw milk cheeses have been recognized and applauded by America’s foremost authorities on cheese, and she travels nationwide to present workshops on cheesemaking and troubleshooting goat health problems.

Take your Cheese Making to the Next Level

If you are only going to buy one cheese making book this may or may not be the one for you. If you want to deeply understand cheese making and take your cheese making to the next level, if you want to really understand each step in cheese making and how you can make it better next time or if something has not worked out quite right and you need to troubleshoot, this is the book for you. If you would prefer a simpler, perhaps less complex approach give Rick Carroll's book or Mary Karlin's book a read.

The first half of this book is devoted to all the details which are very useful in terms of understanding the recipes and the second half is the recipes. The recipes are as presented cheese types rather than names you might be familiar with: 1) fresh, acid, coagulated cheese, 2) brined cheeses, fresh and aged, 3) white mold, surface ripened cheeses, 4) washed rind surfaced-ripened cheeses, 5) blue cheeses, 6) stretched and kneaded pasta filata cheeses, 7) semihard to hard cheeses, and 8) extra hard grating cheeses. Now this presentation style may have you thinking, "hey, I just want to make XYZ cheese"; this presentation style is different from other cheese making books but it I think that it allows me to develop as a cheese maker and style my own cheeses in each category rather than trying to mimic my favorite cheeses. But, specific cheese names are discussed in the introduction to each cheese type to help you.

While some newbie cheese makers might be put off by the detail, I found that I was able to jump in after reading the first half of the book with fewer questions and more confidence than I found with other books. Most questions are answered in the first half of the book or in the introduction to each recipe. The first half contained useful tips such as pre-measuring all of your large packets into smaller quantities to preserve the integrity of the culture as well as save money, pouring diluted Calcium chloride and rennet over a skimmer, how-why-when to cut the curd, learning that there is no perfect bacteria or blend of bacteria for any single cheese (that's super nice to know as you compare different recipes!), and so on. The first half is 120 pages or so jammed packed with information to help you be successful and understand what you are doing and why. It's terrific!

Also, there are a number of tables and charts that are VERY USEFUL! The charts of cultures can eliminate some of the confusion regarding cultures used to make each type of cheese and what characteristics each can impart.

Bottom line: Terrific addition to the cheese makers' library.

Good Book But It Rambles

I was going to title this 'Was she paid by the word' but that was entirely to snarky, because I must say that this book is essential for anyone wanting to make cheese at home, 98% of the info you will ever need is there. With that said, finding the information is frustrating. There are a lot of things that are glossed over in the home cheese making world that a beginner would like to know, for example: How to make a brine? There are 5 paragraphs on how to make a brine yet in the end I am suppose to assume cool water. 5 paragraphs and she couldn't say (after I paid $30+ for the book) Cool Water, Salt, Calcium Chloride & Vinegar. She does include beautiful pictures of cheeses yet no page references to them.

My go to book is Mary Karlin's Artisan Cheese Making at Home. I love the set up, it's concise, it has great photos, helpful hints, additional info and even has a timeline at the top of each recipe. With that said, it is also riddled with so many errors that you need to go to her site and download pages that list only some of the corrections. That's when Mastering Artisan Cheesemaking shines, it's a great reference book, when you can find the chapter, on what you need to troubleshoot. Sadly, lots of times it's faster & easier to google it.

Back to the brining issue. In MK's book brine is water & salt, in GC's brine is water, salt, diluted calcium chloride & vinegar (and you better have a ph tester) GC's brine is better especially if you don't want a slimy cheese but it turned out to be too acidic (my ph strips are not accurate enough) and caused cracking. I could pour over my book in hopes of finding the answer or just Google 'cheese in brine is cracking' which is what I did and found the solution that didn't include better luck next time (I hate that..it's such a waste). And in case you are curious, the answer is to take the cheese out of the brine to stabilize, dilute the brine, then return cheese to the brine for the remaining time. It actually healed the cracks...thanks Cultures for Health.com.

I don't regret buying this book I just expected it to be better (e.g. where's the formula on how to turn pure calcium chloride -a jar of Ball's pickle crisp, into a solution) this bit of info alone would save money and eliminate waste for those of us using pasteurized milk.

I do like this book and if I ever find a cheap copy I would buy it again just so I can take it apart and re-organize it.

The Best Manual Available for Beginners

For anyone starting out in cheesemaking, this book is a MUST, esp I ally the first 141 pages which you should read so often you commit to memory! First and foremost, the recipes are true and exceptionally well written. And those first 141 pages enable you to understand why. Ph levels are imperitive to understand, as are why different types of milk, rennet, starters, etc. affect your actual cheese. My first book was Home Cheese Making by Ricki Carroll (who wrote the forward to this book), which was ok, I guess, but left out so many steps along the way and all of the scientific background that is so essential to understand to reap success. Thanks to Ms. Caldwell, I have every confidence that my cheddar and pepper jack cheeses will be perfect when they are ready post-aging. I am also now on a first-name basis with my local certified raw milk farm selling milk at $10 per gallon and worth every highly tested penny!!! Thank you, Ms. Caldwell, for a superior manual to get me started, but also to you, Ms. Carroll, for helping me to find my newest addictive habit.
