Just got this new version of the course with all of the DVDs and the printed material. I was shocked that there are 4 dvds of a full day seminar plus all of the materials. I have bought other courses that require you to log on and download the slides but it is much better to have them in the book. Great soup to nuts candlestick resource.

Bonnnnng...!
By Sailor Dunc
Back when candlesticks were considered exotic, the tendency of Steve Nison's publicists was to evoke images of "Ancient Trading Secrets of the Orient Revealed". Astute marketing at the time it seems, but makes one squirm today. In this presentation I was thus relieved to see he was NOT sitting cross-legged like a mysterious Buddha with an adoring Geisha bonging a giant gong every time he drops yet another wise Japanese saying. Instead you get a sober straight forward introduction. In large part THANKS to his career spent demystifying them, candlesticks are now mainsteam everywhere. Just as OHLC bars are used by market watchers throughout asia. Cheesy East-Meets-West HYPE is pass.

Candles in fact present the exact same info as OHLC bars. Their contribution is they often dramatize the evolving sentiment and price action more vividly. It really is that evolution that is of interest. Nison is a knowledgeable technical analyst, period. His commentary for TRADES, taking into account everything from moving averages to gaps ("windows") or Wyckoff springs and upthrusts (here "Long Shadows", Inverted Hammers atop big candle run ups etc) stand or not on their own merits, no matter what name you call the formations or your chart style of choice.

Nison has done much to reveal the light candlesticks cast. I just found this PARTICULAR DVD/Book collection over priced. The "full 6 hour" lecture/Power Point (groan) presentation on the DVDs: sleep inducing. It is only for these reasons, rather than content, that I can't honestly go beyond giving 2 (evening) stars. Should you need a basic intro into candlesticks and see this package priced REASONABLY among the other choices, by all means consider it. The attractive BOOK that accompanies the DVD makes a decent stand alone reference. The style is succinct and it is nicely illustrated.

Nison cautions (now and then) against being seduced into premature action by signals that are unconfirmed. Do you want to enjoy sushi or BE the sushi? Steve say, "old Japanese expression: 'Just because the water is calm does not mean there are no crocodiles'." Now THAT is worth a loud gong indeed. Sail on!

A must have
By Chickasaw
Great seminar. Great candlestick primer. Lots of information. Nison shows the proper way to view and use candlesticks. I had no problem at all with the video quality and mine was VHS tapes bought through an Amazon seller for only $12.50!! What a bargain!! And you can print out the slides from this seminar at Nison's site to take notes on.

Under Pressure: Cooking Sous Vide (The Thomas Keller Library), by Thomas Keller

A revolution in cooking

Sous vide is the culinary innovation that has everyone in the food world talking. In this revolutionary new cookbook, Thomas Keller, America's most respected chef, explains why this foolproof technique, which involves cooking at precise temperatures below simmering, yields results that other culinary methods cannot. For the first time, one can achieve short ribs that are meltingly tender even when cooked medium rare. Fish, which has a small window of doneness, is easier to finesse, and shellfish stays succulent no matter how long it's been on the stove. Fruit and vegetables benefit, too, retaining color and flavor while undergoing remarkable transformations in texture.

The secret to sous vide is in discovering the precise amount of heat required to achieve the most sublime results. Through years of trial and error, Keller and his chefs de cuisine have blazed the trail to perfection—and they show the way in this collection of never-before-published recipes from his landmark restaurants—The French Laundry in Napa Valley and per se in New York. With an introduction by the eminent food-science writer Harold McGee, and artful photography by Deborah Jones, who photographed Keller's best-selling The French Laundry Cookbook, this book will be a must for every culinary professional and anyone who wants to up the ante and experience food at the highest level.

Amazon.com Review
The ground-breaking under-pressure method, usually called sous vide, involves submerging food for minutes or even days in sealed, airless bags at precisely the temperature required to produce perfect doneness. Flavors and textures unattainable by other cooking methods can also be achieved.

The technique has been in the pipeline for awhile--one forerunner is the boil-in bag mom used to put veggies on the table--but has only recently attracted top chefs. One is Thomas Keller, famed chef-proprietor of The French Laundry and Per Se. His mightily sized, gorgeously produced Under Pressure explores every inch of sous vide, including the ramifications of using this precision-cooking technique (once time and temperature are established, best results follow automatically) on the craft of cooking, which has always meant a potentially rewarding engagement with the possibility of failure.

The book makes no bones about being addressed to professionals. Typical recipes, like Marinated Toy Box Tomatoes with Compressed Cucumber-Red Onion Relish, Toasted Brioche, and Diane St. Claire Butter, involve multiple preparations and dernier cri ingredients, and thus resist home duplication. There’s also the matter of the pricey equipment required--chamber vacuum packers and temperature-maintaining immersion circulators--not to mention the precautions required to ensure that foods, usually cooked at low temps, are safe to eat.

What the book does offer the home cook is, however, thrilling. It introduces something new under the sun--an exciting, transformative technique of great potential. Anyone interested in food and cooking--not to mention lovers of extraordinarily well produced books--will want to explore Under Pressure. --Arthur Boehm

From Publishers Weekly
The origins of sous vide cooking, or vacuum-packing foods and cooking them at precise, relatively low temperatures for long periods, may have been largely in frozen convenience foods, but it has become standard in top kitchens worldwide, notably Kellers own. Now, Keller aims to demonstrate the technique to a wider swath of cooks—not the masses, but at least those who can afford this lavish volume and the sous vide equipment. One need not cook the exact recipes (which are unaltered from the restaurants) to be inspired by Kellers careful yet whimsical creations, such as a cuttlefish tagliatelle with palm hearts and nectarine or squab with piquillo peppers, marcona almonds, fennel and date sauce. And Keller, with several of his chefs as well as curious cook Harold McGee, takes pains in the introduction to explain sous vide fundamentals, arguing persuasively that it is not a fad but an important technique that allows unparalleled control over how ingredients are heated and what flavors and textures result. Still, at least until the equipment is more affordable, most readers will admire this gorgeous book on their coffee tables, from the simple beauty of photos of ingredients in their natural states to plates with a courses elements so artfully arranged they would not be out of place in a modern art museum. From the Inside Flap
"Under Pressure," writes Harold McGee in his introduction to this, the first book written in English on cooking sous vide, introduces cooks to one of the most important culinary innovations of modern times.
An uncommonly grand claim coming from so precise a scientist and writer, but such is the power of this controversial method. Thomas Keller and his chefs, McGee continues, illustrate the powers of precision heating with dozens of dishes that wouldn t be as fine, or even conceivable, without it.
Sous vide method comprises a group of techniques that allows the cook to realize flavors and textures that no other cooking method can. By sealing food in plastic and submerging it at exact temperatures for minutes or for days food that is traditionally braised, sauteed, roasted, or poached we can attain astonishing results. The tough cuts of meat we once braised in simmering stock can now be cooked sous vide to a medium-rare pink, juicy and meltingly tender. Lamb loin, veal tenderloin, and other larger cuts of meat, difficult to cook evenly, emerge uniform throughout. Delicate fish is enhanced and the margin of error reduced. Vegetables and fruits, cooked in an oxygen-free environment, remain vividly colored. And, because the food is sealed in plastic, its flavor is never lost to the cooking water or the atmosphere. Carrots taste more like carrots, apples more like apples. Small amounts of herbs and other aromatics can have dramatic effects. Cold techniques are valuable as well. Marinades used with meats "en sous vide "are powerfully effective. Various fruits and vegetables, such as melons, cucumbers, and pineapple, become new when compressed.
"Under Pressure: Cooking Sous Vide "is an invaluable contribution to our culinary world at a time of unprecedented interest in food and cooking, both in the restaurant kitchen and at home. The most critical aspect of sous vide lies in discovering what combination of time and temperature achieves the most sublime results. The answers, as discovered and practiced during the past decade by the chefs of The French Laundry and per se, two of the most respected restaurants in the world, are all here, within the innovative recipes from Keller s landmark restaurants.
"Under Pressure "is a source of instruction, technique, and recipes for anyone who wants to experience the new ideas sous vide makes possible, inspiration for what is possible and what might be.

a cookbook to read, not to try - insight into the professional cooking world
By Patricia
Keller wrotoe this for other professionals, and for home cooks who want to know more about the professional realm. The reader would likely NOT want to try these complex recipies at home. That said, I thought that the recipies seemed unappealing and overelaborated. I did, however, after reading, want to visit Keller's restaurant.

Gold standard for sous vide cooking
By Kevin Doyle
If you cook sous vide, you need to read this book. While much of it involves very high-end restaurant techniques that the average person would typically not use, The instruction in The way it all works is invaluable.

Great... Assuming you have unique ingredients in your kitchen
By Morganhorse
I love this book but it has a lot of uncommon ingredients and does not offer any suggestion how to substitute any of the items. I enjoy the book but do not think I will be able to prepare much from it. The book is really a high quality piece of art! The back does give a list of online stores that items can be found from.... But if one recipe needs a half dozen specialty items it will become a pricey meal.

The Prodigy: A Biography of William James Sidis, America's Greatest Child Prodigy, by Amy Wallace

William Sidis, 1897-1944, was the world's greatest child prodigy. His IQ was an estiamted 50 to 100 points higher than Einstein's, the highest ever recorded or estimated. His father, a pioneer in the field of abnormal psychology, believed that he and his wife could create a genius in the cradle. They hung alphabet blocks over the baby's crib-and within six months little Billy was speaking. At 18 months he was reading The New York Times; at three, Homer in the original Greek. At six he spoke at least seven languages.

Told with flair and insight ... this is his story.

Fascinating and Heartbreaking
By Patricia Lewin
I'm doing research on child prodigies for my newest book. The whole area of intellegence has always intrigued me, so this is painless research. More than that, this book, and the man it's about, William Sidis, is fascinating. And heartbreaking.

According to this book, William Sidis' IQ was estimated at 300. He was simply brilliant, going through gradeschool in three months and high school in 6 weeks. He took the entrance exam to Harvard at age nine and passed, but wasn't allowed entrance until age 11. And because of his gift he was hounded & ridiculed by the media from a young age until he basically went underground as an adult, hiding his genuis. It's very sad and will make you ashamed of what we sometimes do to one another. In this case, a great intellect and all his possible achievements were lost.

A fascinating, fascinating book.

The Prodigy - A Biography of William James Sidis.
By New Age of Barbarism
_The Prodigy_ (1986, E. P. Dutton) by Amy Wallace is a biography of one of America's greatest child prodigies William James Sidis. This book traces the life of Sidis from his earliest infancy in which his amazing intellectual powers were revealed to his experience at Harvard and eventually his decline and later life. William James Sidis (1898 - 1944) was an American child prodigy who early on revealed uncanny mathematical and linguistic abilities. Sidis was the son of Boris Sidis and Sarah Mandelbaum, two Russian Jewish immigrants. Sidis was to reveal uncanny abilities at an early age and the influence of his psychiatrist father Boris Sidis was to play an important role in his development. Sidis revealed uncanny abilities in mathematics, linguistics, and other areas at a very early age and was thus to achieve widespread notoriety as a child prodigy. Sidis attended Harvard University where he taught advanced math courses and was widely regarded as supremely intelligent. Later Sidis was to teach at Rice University but in later life was to drop out of the educational establishment. Sidis became involved in politics and was to become an influential libertarian, socialist, and pacifist. Sidis also was to write several prominent books and articles including theories regarding cosmology, the Second Law of Thermodynamics, and black holes, American Indian history, and an obscure work on the collection of street car transfers. While Sidis later life was to prove disappointing in terms of his early abilities, he remained a notorious figure and was frequently hounded by women and in the press. The life of Sidis raises issues concerning how prodigies are treated by mainstream society and the role of gifted education. The failure of Sidis asks important questions regarding the failure of many prodigies, although the author maintains that Sidis' life was not a failure by his own standards but rather it became necessary for him to "go underground". The author estimates the I.Q. of Sidis at between 250 and 300 based on his mathematical abilities.

The book includes the following chapters -

The Little Father - explains the early life of Boris Sidis, the father of William James Sidis, and a Ukrainian immigrant to America. Boris Sidis was to attend Harvard where he achieved notoriety in the fields of psychiatry and psychology and was influential in the circle around Josiah Royce, William James, and other famous thinkers. Sarah Mandelbaum was born in Russia and immigrated to America where she met Boris Sidis and was tutored by him. She was to go on to become a medical doctor, though she was never to use her M.D. degree. She became the mother of William James Sidis.

April Fool - describes the birth of William James "Billy" Sidis on April 1, 1898 noting his early uncanny genius and abilities. The author notes the early accomplishments of the infant Sidis in speaking and reading as well as his early education under his father psychiatrist Boris Sidis.

The Little Professor - explains Sidis schooling and his excellent performance in subjects such as mathematics, astronomy, languages, anatomy, map and calendar making, and grammar at the very early age of eight. Notes Sidis uncanny abilities in particular in mathematics and languages and his renown as a "little professor".

Sidis an Avatar? - explains Sidis attendance at Harvard University along with two other prodigies the mathematician Nobert Weiner and the statesman Adolf Berle. Notes the problematic relationships Sidis had at Harvard due to his young age. Explains Sidis astounding performance in a lecture he gave on four-dimensional mathematics. Compares Sidis to other prodigies such as Gauss and John Stuart Mill and notes their accomplishments.

Utopian Dreams - explains the fact that the press was to hound the child prodigy Sidis and when he became sick maintained that he had suffered a breakdown. This hounding of Sidis was to occur for the rest of his life. Considers Sidis' grades at Harvard as well as his early political writings concerning a utopia which he referred to as "Hesperia" and the role of the Constitution in Sidis' political theories. Notes the fact that Sidis was opposed to art and swore never to marry at an early age.

Portsmouth - considers Boris Sidis' researches into Abnormal Psychology and the Sidis Psychopathic Institute. Notes the role of the Sidis family in Portsmouth, New Hampshire as well as the relationship of the family to William James and other important Harvard professors and personalities.

The Perfect Life - explains the problematic relationship of Sidis to women and his vow never to marry. Notes some of the comments made by Sidis on Harvard's anti-Semitism, unconscious intelligence (his dabblings in his father's field of psychology), education, eugenics, and the family.

Rice - explains the experiences of Sidis at Rice and various proposals made there for marriage. Notes Sidis accomplishments but also his difficulties at Rice and notes his early involvement in radicalism and socialism.

Too Radical for the Radicals - explains how Sidis was ridiculed in the press and his relationships with women were brought to public attention; notes Sidis continuing involvement in radical politics at the time of the Russian Revolution. Notes the role of socialism in the political understanding of Sidis and his identification as a radical by the authorities.

May Day - explains Sidis' first job at MIT and his involvement in the May Day riots and his support for Russian radialism. Explains Sidis difficulties with the authorities, his atheism, and support for the Soviet system.

Rebellion, Romance, and Reversibility - explains Sidis' rebellion against his family, his romances, his involvement with radicalism and the American Communist Party, and his writings on cosmology. In particular, Sidis was to write on cosmology in his book _The Animate and the Inanimate_ (1925) which considers theories of the Big Bang and the "Great Collision", noted the role of the Second Law of Thermodynamics and "Fermi's paradox", and explained various issues surrounding black holes. This book was highly praised by Sidis' Harvard classmates Buckminster Fuller and Norbert Wiener.

In Search of Solitude - explains Sidis search for solitude from the prying eyes of the press explaining why he left academic life and his taking up as a clerk running a comptometer, his rebellion against his father, his relationship with Martha Foley, and relates his own experiences to those of another child prodigy John Stuart Mill.

The Peridromophile - explains how Sidis took up the eccentric hobby of collecting street car transfers ultimately writing an obscure book on the topic entitled _Notes on the Collection of Transfers_ (1926). Sidis was to form _The Peridromophile_, a magazine devoted to this hobby and further engaged in radical politics.

The Double Life - explains Sidis further dedication to this hobby and his double life as an operator of the comptometer. Sidis was to attempt to avoid the press who hounded him repeatedly because of his earlier life as a child prodigy.

The Tribes and the States - notes Sidis' involvement with the American Indians and his writings in _The Tribes and the States_ which attempted to discuss American prehistory. Here, Sidis tried to show the influence of the American Indians on the American Founders and their understanding of liberty (which differed from Sidis' earlier political musings about "Hesperia"). Sidis also was to comment on issues of equality, liberty, money, and democracy in these volumes and to support the American Indian involvement in early American history.

Friends and Relatives - notes the role of some of Sidis' friends and relatives and their discussion and relationships including discussion of the ideas in _The Animate and the Inanimate_. This also explains Sidis attempt to lead a quiet life at his job free from the press.

Invasion of Privacy - notes the role of the press in once again invading the privacy of Sidis when his life and job were revealed to the public and his life came under assault from the press who hounded him.

The Pacifist and the Transfer Wars - explains Sidis' support for pacifism during the Second World War and some of the conflicts that developed as a result of this pacifism and support for radical politics.

"America's Greatest Brain" - explains what happened to Sidis after Boris' death and his troubled relationship with Sarah his mother. Notes how new difficulties arose for Sidis in light of his pacifism during the First and Second World Wars which was considered radically un-American. Notes how the FBI under J. Edgar Hoover was to investigate Sidis' "Peridromophilists" and consider them a radical organization. Explains the reaction of Sidis' friends to the press and their attempts to set the record straight about Sidis.

A Superior Spirit - describes Sidis death and the reaction of his various friends and relatives and their support for his memory. Notes the role of "child prodigies" and "child geniuses" in the history of the United States and the reaction of individuals such as Norbert Wiener to that notion. Explains how the treatment of child prodigies and the gifted resulted in unhappiness for Sidis.

Epilogue - argues that William James Sidis did not burn out or decline as was argued but simply was forced to go underground (the author quotes Ayn Rand's novel _Atlas Shrugged_ to show how frequently the man of genius was forced to go underground in the light of a totalitarian society). The author argues that Sidis had an I.Q. estimated between 250 and 300 putting him easily amongst the world's highest I.Q.s ever recorded. The author considers some of the achievements of Sidis and his early talents relating this to Boris and Sarah's child rearing methods. The author shows some of the problems for gifted education and reflects on comments made by Norbert Wiener concerning gifted education and the Quiz Kids. Explains how gifted children must be allowed to grow up in a world supportive of their talents and that does not shun their oddities.

This book offers an interesting biography of a forgotten genius William James Sidis. Sidis was a brilliant child prodigy who excelled in both mathematics and linguistics but was later to leave these fields to pursue menial labor. Sidis was involved in radical politics and had many eccentric ideas concerning politics, the American Indians, cosmology, and other topics as well as the eccentric hobby of collecting street car transfers. This book provides an interesting study of Sidis and demonstrates some of the difficulties and cruelties inflicted upon him by an intolerant society.

Not Reliable
By Amazon Customer
I no longer believe the stories of Sidis's precocity are true, much as I wish they were. He was an intelligent child, to be sure, but the important claims have little to support them. Some of the claims, such as his sister's declaration that he knew all the languages in the world, are clearly absurd. But even those which might just barely be true turn out to have only his parents as witnesses or are second- or thirdhand reports. Even the positive comments by the credible Norbert Wiener about Sidis's lecture on 4-dimensional bodies at Conant Hall are equivocal upon examination.

Ms Wallace records the reports accurately but not skeptically. She wants to believe. So did I, which is perhaps why I am a bit harsh with her.

While many of these decisions lead to obvious choices, many present thorny problems; some questions may be so subtle that they are not even noticed consciously by the journalist. This up-to-date collection of more than two dozen real-life cases illustrates the moral issues facing contemporary American journalists. It will help students hone their reasoning skills, encouraging them to think rationally and act with integrity. The cases are presented in substantial detail to provide students with a realistic sense of the complexity of issues facing journalists today.

Knowlton, a veteran journalist and teacher, combines his experience of more than 30 years in the field with extensive interviews with dozens of today's top journalists, so that each case is presented with commentary and thought-provoking analysis. Discussion questions at the end of each case analysis probe the depth of the ethical concerns raised. The Cosmopolitanism Reader, by Garrett W. Brown, David Held

The world is becoming deeply interconnected, whereby actions in one part of the world can have profound repercussions elsewhere. In a world of overlapping communities of fate, there has been a renewed enthusiasm for thinking about what it is that human beings have in common, and to explore the ethical basis of this. This has led to a renewed interest in examining the normative principles that might underpin efforts to resolve global collective action problems and to ameliorate serious global risks. This project can be referred to as the project of cosmopolitanism.

In response to this renewed cosmopolitan enthusiasm, this volume has brought together 25 seminal essays in the development of cosmopolitan thought by some of the world's most distinguished cosmopolitan thinkers and critics. It is divided into six sections: classical cosmopolitanism, global justice, culture and cosmopolitanism, political cosmopolitanism, cosmopolitan global governance and critical examinations. This volume thus provides a thorough and extensive introduction to contemporary cosmopolitan thought and acts as a definitive source for those interested in cosmopolitan thinking and its critics.

Review
"Truly a reader's reader. Compared with other books of its type, it is unusually comprehensive, systematic and digestible."
Survival

"An excellent centrepiece for a graduate course on cosmopolitan thought and an excellent reference for graduate or undergraduate students seeking a single volume that draws together historical and contemporary cosmopolitan thought."
Central European Journal of International and Security Studies

"If you want to understand cosmopolitanism - and you should - this volume is the place to go. Brown and Held have brought together the most important contributions to understanding (and assessing) cosmopolitanism as a philosophical ideal, a political project, and a practical program. It is a great collection on an important topic."
Joshua Cohen, Stanford University

"Two distinguished scholars have assembled a remarkable collection of essays, classical and contemporary, that challenge us all to think through what it would mean for politics, culture and economy if the world were truly one and each individual was given his or her due regard as a citizen of the globe."
Michael Doyle, Columbia University

A Good Introduction to Cosmopolitanism
By J. Hoopes
I got this as a textbook for one of my classes. It's a very good introduction to the background and current debates surrounding cosmopolitanism. The editors seem to have done a good job of picking a representative sample of the most influential authors on the subject.

I found a few typos, but nothing serious. There's a brief introduction to each section that helps define the geography (sorry for the pun) of the topic. It has a decent index in it, but it could use just a bit more thoroughness.

My one small complaint about the book is its binding/size. It won't lay flat, so you constantly have to hold it open.

In the end, though, I'm glad my professor chose this book. It was easy to use.
